A. Business Profile & Account Information

• Account Identification: Business name, owner/chef email address, authentication credentials managed securely via Firebase Authentication.
• Restaurant Operational Settings: Currency symbol, unit system (metric/imperial), target food cost percentages, and average monthly revenue benchmarks.

B. Kitchen Operations & Financial Metrics

• Ingredients & Inventory: Custom ingredient names, purchase quantities, pack sizes, yield percentages, and unit supplier prices.
• Recipes & Menu Engineering: Dish names, portion sizes, ingredient compositions, menu selling prices, and category classifications (Stars, Plowhorses, Puzzles, Dogs).
• Overhead Expenses: Monthly rent, labor spend, utilities (power, gas), packaging, equipment depreciation, and third-party delivery commissions.
• Wastage Records: Logged spoilage, kitchen prep waste, expiration logs, and theoretical variance reconciliations.

C. Receipt, Invoice & Recipe OCR Media

When you utilize the "Upload Dish / Invoice OCR" feature, images of recipes, ingredient price sheets, or supplier invoices are processed temporarily to extract ingredients, quantities, and pricing using Google Vision / Gemini AI.

2. How We Use Your Information

We use the collected information exclusively to provide, maintain, and enhance the App’s functionality:

• Cost Calculation & Analytics: Calculating accurate Cost of Goods Sold (COGS), plate costs, contribution margins, and gross/net profit ratios.
• Real-Time Benchmarking: Comparing your operational spend against standard Food & Beverage (F&B) industry benchmarks (e.g., Target Overhead ≤ 30–35%, Rent ≤ 10%, Labor 15–18%).
• AI Processing: Extracting dish ingredients, units, and rates directly from photos of printed or handwritten recipes.
• Report Generation: Enabling you to export complete CSV and PDF operational summaries and performance reviews.

3. Data Protection & Security Architecture

A. Strict Multi-Tenant Data Isolation

All recipes, ingredient costs, supplier invoice scans, and financial margins are strictly partitioned and scoped to your authenticated businessId. No other restaurant, chef, or user on the platform can view, access, query, or infer your proprietary recipes or costing data.

B. End-to-End Encryption

• In Transit: All communications between your device and our backend servers are encrypted using modern TLS 1.3 cryptographic protocols.
• At Rest: Database documents, user profiles, and stored assets are encrypted with enterprise AES-256 encryption managed via Google Cloud Platform and Cloud Firestore.

4. Zero Third-Party Data Selling Policy

We do not sell, rent, broker, trade, or monetize your data. Your culinary intellectual property, confidential supplier price agreements, recipe ratios, and sales figures will never be shared with or sold to third-party advertisers, food delivery aggregators, supply brokers, or competing restaurants.

5. Third-Party Service Providers

We integrate exclusively with vetted enterprise cloud providers:

• Google Cloud Platform & Firebase: Used for authentication, database storage (Firestore), and hosting infrastructure.
• Google Gemini / Cloud Vision API: Used transiently for machine perception (OCR) to convert uploaded invoice and recipe images into structured text. Uploaded images are processed solely for extraction and are not retained to train public models.

6. Data Ownership, Portability & Deletion

You retain 100% ownership of your culinary and financial data:

• Data Portability: You can download and export all your ingredient tables, recipe specs, overhead ledgers, and menu profitability data into CSV or PDF formats at any time from the app drawer.
• Account & Data Deletion: You have the right to request immediate and permanent deletion of your account and all associated kitchen records. Upon request, all stored data scoped to your business profile is permanently purged from our active databases and backup routines.
